Chicken Noodle Soup

1 tablespoon butter
1/2 cup chopped onion
1/2 cup chopped celery
4 (14.5 ounce) cans chicken broth
1 (14.5 ounce) can vegetable broth
1-1/2 pound cooked chicken breast, cut up
1 - 8 ounce bag noodles, narrow not wide
1 cup sliced carrots
1 teaspoon dried Italian seasoning
salt & pepper to taste

Bake 2 -3 boneless, skinless chicken breasts at 350 degrees for about 45 minutes. Use any bottled chicken seasoning on both sides before baking. Let cool and then cut up.

In large pot over medium heat, melt butter. Cook onion and celery in butter just until tender, 5 minutes. Pour in chicken and vegetable broths, add chicken, carrots, basil, oregano, salt & pepper. Bring to boil covered for 15 - 20 minutes. Add uncooked noodles, bring to boil, then reduce heat and simmer 20 minutes before serving.
