White Chocolate Cherry Cookies

A very beautiful and delicious holiday cookie!

1/2 cup unsalted butter, softened
1/2 cup packed light brown sugar
1/2 cup granulated sugar
1 TBSP vanilla
1 large egg
1 1/2 cups all-purpose flour
1 1/2 tsp baking soda
1 cup dried cherries, chopped or dried cranberries
3/4 cup white chocolate chips
3/4 cup pecans, chopped
dash of love

  1. Preheat oven to 350
  2. With an electric mixer, cream the butter and both sugars together until smooth.
  3. Add the vanilla and egg, mixing well.
  4. Sift together the flour and baking soda.
  5. Spoon the flour mixture gradually into the creamed sugar mixture.
  6. Stir in the cherries, white chocolate chips and pecans.
  7. Drop by teaspoon onto ungreased baking sheet, 2 inches apart.
  8. Bake one sheet at a time for 12 - 15 minutes until golden on top.
  9. Cool on baking sheet for 5 minutes before moving to rack.
