Nutty Banana Muffins

1 cup sugar
1/2 cup shortening
2 eggs ( or 1/2 cup applesauce)
1/2 cup butter milk (or almond milk
 with 1 1/2 tsp of apple cider vinegar)
1 tsp baking soda
2-1/2 cups flour
1 tsp baking powder
3 or 4 bananas, mashed with a pinch of salt
1 tsp vanilla
1 cup chopped nuts
sprinkle love on top

Mix ingredients in the order listed.  Pour into 24 lined cupcake tins.  Bake at 400 for 5 minutes, turn down to  350 for 15 to 20 minutes.

Zucchini Muffins

Preheat oven to 350 degrees.

3 cups flour
1 tsp salt
1 tsp baking soda
1 tsp baking powder
3 tsp cinnamon
1 tsp nutmeg
3 eggs or 3/4 cup applesauce
1 cup vegetable oil
1-1/4 cup sugar
1 cup brown sugar
3 tsp vanilla
1 TBSP apple cider vinegar
3 cups shredded zucchini
a dash of love

Combine the first 6 dry ingredients in a bowl. Set aside.
Beat the eggs ( or applesauce), oil, sugar, brown sugar and vanilla, apple cider vinegar together. Add the dry ingredients gradually until well mixed. Add the shredded zucchini, stir well.
Don't forget the love!

Pour into 24 lined muffin tins. Sprinkle coarse sugar on top.
Bake 20 - 25 minutes. Cool in pans for 10 minutes. Remove muffins and place on cooling racks.

Very Cherry Muffins

1 1/2 cups flour
3/4 cup sugar
1/2 tsp salt
2 tsp baking powder
1/3 cup oil
1/3 cup milk or almond milk
1 egg or 1/4 cup applesauce
1 tsp almond flavoring
1 1/2 tsp apple cider vinegar
1  cup Maraschino Cherries, chopped

Combine all dry ingredients in a mixing bowl. Add the liquid ingredients and mix until combined.
Add the chopped cherries and gently fold into batter with a spatula until incorporated.
Fill 12 muffin liners. Sprinkle with course sugar. Bake at 375 degrees on the middle rack for 20-25 minutes. Allow muffins to cool for 10 minutes before removing from pan.

Crumb Cake Muffins

1 1/2 cups flour
3/4 cup sugar
1/2 tsp salt
2 tsp baking powder
1/3 cup oil
1/3 cup milk or almond milk
1 egg or 1/4 cup applesauce
1 tsp vanilla
1 1/2 tsp apple cider vinegar
Combine all dry ingredients in a mixing bowl. Add the liquid ingredients and mix until combined.

Streusel
1/2 cup flour
1/2 cup sugar
1 tsp cinnamon
6 TBSPS cold butter, cut  1/2 inch pieces (or butter substitute)
In a medium bowl, combine the dry ingredients. Using a fork or pastry cutter, add the butter pieces and incorporate until small crumbs appear.

Add the chopped cherries and gently fold into batter with a spatula until incorporated.
Place a tablespoon of batter in the bottom of 12 muffin liners. Sprinkle 1/2 of the streusel  on batter. Place another tablespoon of batter on top.  Sprinkle muffins with remaining streusel.

Bake at 400 degrees on the middle rack for 20-25 minutes. Allow muffins to cool for 10 minutes before removing from pan.

Bright Blueberry Lemon Muffins


1 1/2 cups flour
3/4 cup sugar
1/2 tsp salt
2 tsp baking powder
1/3 cup oil
1/3 cup milk or almond milk
1 egg or 1/4 cup applesauce
1 tsp vanilla
1 1/2 tsp apple cider vinegar
2 TBSP fresh squeezed lemon juice
1 tsp lemon zest
1 heaping cup blueberries

Combine all dry ingredients in a mixing bowl. Add the liquid ingredients and mix until combined.
Add the blueberries and gently fold into batter with a spatula until incorporated.
Fill 12 muffin liners. Sprinkle with course sugar. Bake at 400 degrees on the middle rack for 20-25 minutes. Allow muffins to cool for 10 minutes before removing from pan.

Zucchini Bread

Happy Belated Zucchini Day (was Saturday, August 8th)!  My father brought over a huge zucchini and we all made bets on its size. I think Katie won guessing 17 inches! I decided to make this super moist Zucchini Bread and everyone raved about it! Notice how it sparkles on top? I sprinkled with coarse decorating sugar before baking for a delicate, crunchy texture!

First, we cut the zucchini into 3 sections, then quartered each section and sliced off the seed section so each piece could be shredded in the food processor or use a standard hand grater. This recipe takes 3 cups and I had so much left over that I froze 2 other bags with 3 cups each! I'll be trying other recipes in the future.

Preheat oven to 325 degrees.

3 cups shredded zucchini

Pour into 2 medium bread pans coated with non-stick cooking spray.

Optional: Sprinkle coarse sugar on
top.
Bake 50 - 60 minutes. Cool in pans for 10 minutes. Remove bread from pans and place on cooling racks.

Blueberry Muffins

When I asked Dad what he was doing for Father's Day he said he was coming over to my house for a cup of coffee and to read the Sunday newspaper. I immediately thought these Blueberry Muffins would be a perfect treat sprinkled with love.


1 1/2 cups flour
3/4 cup sugar
1/2 tsp salt
2 tsp baking powder
1/3 cup vegetable oil
1 egg
1/3 cup milk
1 tsp vanilla
1 cup fresh blueberries
Course decorating sugar
1 dash of love

Combine all dry ingredients in mixing bowl. Measure vegetable oil in a 1 cup liquid measuring cup and add the egg. Then fill with milk until it reaches 1 cup. Pour into dry ingredients and mix until combined. Add a dash of love, then vanilla and mix. Carefully fold in blueberries with a rubber spatula just until incorporated. Fill 8 muffin liners to the top. Sprinkle with course sugar. Bake at 400 for 20 - 25 minutes.

Sprinkle course sugar on top before baking

Whole Wheat Dinner Rolls

These rolls have become a family favorite. Richard makes the dough in the bread machine. Recipe from For The Love of Cooking


  • 1 cup of water
  • 2 tbsp of butter, melted; plus more for brushing on top of rolls
  • 1 egg (hold under warm water before breaking it)
  • 2 cups flour
  • 1 1/4 cup of whole wheat flour
  • 1/4 cup of sugar
  • 1 tsp salt
  • 3 tsp regular active dry yeast
Place all dough ingredients in the bread machine in the order listed. Select the dough cycle and press start.

Once the bread machine stops (it was one and a half
hours on my machine).
Grease a 9x13 glass baking dish.
Divide dough into 15 pieces and shape each piece into a ball. Place 2 inches apart in the baking dish. Brush with melted butter then cover with a clean dish cloth (don't use plastic wrap).
Let rise in a warm place 30 to 40 minutes or until doubled in size. Brush top with butter. Bake at 375 for 10-12 minutes.

Zucchini Bread

1 spice cake mix
1 1/3 cup water
¼  cup vegetable oil
3 eggs
2 cups shredded zucchini
½ cup raisins
½ cup chopped walnuts
 Mix all ingredients together. Grease and flour 2 bread pans or bunt pan. Pour batter. Bake at 350° for 28 minutes for loaf, 35 – 40 minutes for bundt.

Frosting:
¼ cup soft butter
1 ¾ cup powdered sugar
1 tsp vanilla
½ tsp cinnamon
1/8 tsp nutmeg
1 – 2 Tbsp milk

Drop Biscuits

2 cups flour
3 tsp. baking powder
1 tsp. salt
1/4 cup + 2 Tbsp. Crisco
1 cup milk

Lightly combine dry ingredients.  Cut in shortening.  Add milk.  Mix gently.
Grease a round cake pan.  Spoon 7 - 8 mounds around pan close together and 1 in center.
Bake at 400 for 12 - 15 minutes.

Best Banana Bread

Whenever I have a few ripe bananas I like to make this recipe for my family.

1 cup sugar
1/2 cup shortening
2 eggs
1/2 cup sour milk (milk & 2 TBSP cider vinegar)
1 tsp baking soda
2-1/2 cups flour
1 tsp baking powder
3 bananas, mashed with a pinch of salt
1 tsp vanilla
1 cup chopped nuts
sprinkle love on top

Mix ingredients in the order listed.  Pour into 2 medium greased bread pans.  Bake at 350 for 40 to 50 minutes.
